6 no-cook vegan recipes you won't have to turn the oven on for
Is it us or are things getting hot out there? For those days when you won't even entertain the thought of turning on your oven or standing in front of a hot pan, we’ve got the perfect (mostly) raw and vegan recipes that’ll nourish your body and refresh your mind!
1. Mango avocado spring rolls with spicy cashew sauce
Despite what the name suggests, it’s totally acceptable to have sprills in the summer. In fact, we’d even argue that they’re best on hot summer nights. This one features fresh mango, ripe avocado, crunchy veggies and a cashew sauce with some kick!
2. Avocado sashimi with crunchy almond salsa
We love avocado all year long, but there’s something especially summery about it. This recipe has the avocado thinly sliced and garnished with a salsa of cherry tomatoes and some crunchy soaked organic almonds - now that’s what we call a centerpiece!
This easy-peasy and super-fresh recipe calls for some riced cauliflower (hello, food processor bliss!), a ton of fresh herbs, some chopped raw almonds and some lovely fresh veggies. It’s grain- and gluten-free, refreshing, light but filling and incredibly flavorful!
4. Heirloom tomato salad with pistachios
So simple and yet so satisfying, this salad features your favourite ripe and juicy local heirloom tomatoes, fresh basil, and crunchy pistachios. It doesn’t get any summerier than this!
Heat without any heat? You bet! This raw vegan carrot soup is what summer dreams are made of: creamy, spicy and luxurious. It’s also ready in a blitz or two of your beloved blender, which definitely makes it a superstar in our book!
6. Cold asparagus-avocado soup
Speaking of soups… Okay, so this one isn’t raw since the asparagus has been cooked in boiling water, but let’s be real: it’s worth turning your stovetop on!
