Almond and Berries Granola Bar

Almond and Berries Granola Bar

Ingredients

  • 1 2/3 cup quick oats
  • 1/2 cup spelt flour
  • 1 cup PRANA organic raw European almonds
  • 3/4 cup PRANA organic cranberries, sweetened with apple juice
  • 1/2 cup dried blueberries
  • 1 tbsp organic fair trade ground Ceylon true cinnamon
  • 1 tsp sea salt
  • 3/4 cup PRANA organic blanched almond butter
  • 3/4 cup maple syrup
  • 3 tbsp water
  • 6 tbsp PRANA organic coconut oil, and more to grease the pan

Preparation

  1. Preheat oven to 350°F (180°C), line a 9"x13" pan with parchment paper and grease lightly with coconut oil
  2. Using a food processor, finely chop the almonds and cranberries. *The bars hold together better when the pieces are smaller.
  3. In a large bowl, combine all the dry ingredients, including the dried fruits.
  4. In a smaller bowl, combine all the wet ingredients using a hand mixer.
  5. Pour the wet ingredients in with the dry ingredients. Stir until well combined.
  6. Put the mixture in the prepared pan and, holding a piece of plastic film or parchment paper in your hand, press the mixture down firmly and evenly.
  7. Place in preheated oven and bake for 25 minutes, or until the edges are golden brown.
  8. Remove from the oven and let cool for 20 minutes before transferring to a cooling rack.
  9. Cut the bars the size you want. 
  10. Store in an airtight container.
