Why buy a popcorn mix at the store when you can make one at home in under 10 minutes? You don't need to be an ace in the kitchen to come up with a delicious snack. This recipe makes a great treat for a movie night in, a simple afternoon snack, or even as a side or topping for soups and salads. When making a nutritious gourmet popcorn topping, look for a mix of flavourful ingredients like nutritional yeast, spices, fresh herbs and nuts. Ingredients
- ⅓ cup PRANA organic raw European almonds (or a mix of PRANA organic cashews, Brazil nuts, walnuts, etc.)
- ½ tsp ground turmeric
- ½ tsp ground cumin
- ¼ cup nutritional yeast
- A few generous pinches of sea salt
- Fresh ground pepper
- 5 tbsp PRANA organic coconut oil
- ½ cup popping corn
Preparation
- In a food processor, grind nuts into a fine powder for several seconds, then add spices, nutritional yeast, salt and pepper, mixing a few seconds more. Set aside.
- In a large saucepan, melt 2 tbsp of coconut oil over medium heat.
- Once oil is hot, add in popping corn and cover pot with a strainer large enough to seal in popcorn and prevent kernels from flying everywhere as they pop.
- Wait until the first kernels pop, and then begin shaking pan while still holding strainer firmly on top. Let kernels pop, shaking every 5 or 6 seconds.
- Once corn has stopped popping, transfer to a large bowl. Melt remaining coconut oil and pour all over popcorn. Sprinkle with nut and spice mix, tossing to coat popcorn.
