It's good practice to have a Mason jar filled with chia pudding in your fridge at all times, either to accompany your breakfast smoothies or to prepare a small dessert on the fly. And you'll see after trying this recipe that this combo really takes the cake when it comes to chia desserts! With its maple-caramelized apples and crunchy nuts on top of a bed of ProactivChia pudding, this recipe will surely become a staple. These desserts easily keep for 5-6 days in the refrigerator and are perfect for your afternoon cravings or to pack for lunch!
Ingredients
Chia Pudding
- 3 tbsp PRANA organic whole black Proactivchia seeds
- 1 cup almond milk
- 1 tsp maple syrup
Caramelized Apples and Nuts
- 1 tbsp PRANA organic coconut oil
- 3 cooking apples (Cortland, McIntosh, Spartan, Lobo or other)
- ¼ cup PRANA organic raw European pumpkin seeds
- ¼ cup PRANA organic raw pecans, chopped
- 2 tbsp maple syrup
Preparation
Chia Pudding
- Mix the ProactivChia, almond milk and maple syrup in a Mason jar. Close the jar and shake well.
- Let the chia seeds swell for at least 30 minutes, shaking occasionally. The pudding can also be prepared the night before.
Caramelized Apples and Nuts
- Peel and core the apples. Cut into small cubes.
- In a skillet, melt the coconut oil. Add the apples, pumpkin seeds, pecans and maple syrup. Cook over medium-high heat for 5 to 8 minutes or until apples are golden brown and lightly caramelized, and the nuts are browned but still crunchy.
- In a glass, small Mason jar or bowl, prepare the parfait by alternating layers of chia pudding with layers of caramelized apple and nut mixture. Finish with an apple-nut layer.
