But summer is the time to make them on the BBQ! With its deliciously sweet taste and gorgeous orange flesh, the sweet potato is a root vegetable that should be on every plate, especially since its delectable flavour makes it quite the hit with kids. From appetizers to desserts, there's always room for sweet potatoes. In this recipe, sweet potatoes are grilled just a few minutes, then topped with a delicious sauce full of fresh herbs and crunchy nuts. Try it once, and it'll become your go-to side for your summer barbecues. Sweet potatoes are rich in vitamin A, a key component in helping children grow healthy and strong, especially their eyes, skin and immune system.

Ingredients

Grilled sweet potatoes

  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • ½ tsp sea salt
  • ¼ tsp smoked paprika
  • 1 pinch chili powder
  • Ground black pepper

Crunchy Nut-Herb Sauce

  • 2 cloves garlic
  • 4 to 5 sprigs fresh mint
  • 4 to 5 sprigs Italian (flat-leaf) parsley
  • Sea salt and ground pepper
  • 2 tsbp olive oil
  • 1 tbsp apple cider vinegar
  • 3 tbsp PRANA organic shelled sunflower seeds
  • 3 tbsp PRANA organic raw European pumpkin seeds
  • ¼ cup PRANA organic raw European almonds, coarsely chopped

Preparation

Grilled sweet potatoes

  1. Cut sweet potatoes lengthwise into thin slices.
  2. Mix oil, spices, salt and pepper in a large bowl, then add sweet potato slices. Mix with your hands. 
  3. Cook sweet potato slices on barbecue or in a very hot grill pan, grilling 4 to 5 minutes per side.
  4. Meanwhile, prepare herb sauce.

Crunchy Nut-Herb Sauce

  1. Mince garlic, finely chop herbs, and mix with remaining sauce ingredients. 
  2. On a large serving platter, arrange grilled sweet potato slices, drizzle with nut-herb sauce, and serve.
