Camping Primavera Tagliatelle

This simple recipe is perfect for camping! It requires little preparation but will make everyone happy, adults and children!

Tip—Make your life easier while camping and meal prep a few things before you leave: Make the walnut Parmesan; chop the broccoli into florets; wash and chop the kale; and even make your own pesto if you have extra time at your disposal!
Ingredients
For the walnut Parmesan
- 1 cup walnuts
- 3 tbsp nutritional yeast
- 3/4 tsp sea salt
For the pasta
- 1 pack tagliatelle pasta
- 1 broccoli florets only (peel the stem and eat it raw with your favourite dish, it’s delicious!)
- 1 big handful of chopped kale
- 1 can green peas
- 1/2 cup of vegan pesto
Preparation
For the walnut Parmesan
- Place the walnuts, the nutritional yeast and the salt in a food processor and pulse until you obtain a crumbly texture that looks similar to grated Parmesan;
- Store in a glass container until ready to use (if you are home I recommend keeping it refrigerated);
For the pasta
- Place a pot of salted water on your stove
- When the water is boiling add the tagliatelle pasta
- Three minutes before the pasta is done cooking (according to the package instructions), add the broccoli florets into the boiling water
- One minute before the pasta is done cooking, add the chopped kale into the boiling water
- Drain the pasta
- Add the pesto and mix well
- Add the drained green peas and mix gently
- Finish it off with the walnut Parmesan and a crack of black pepper.
