Cashew Mint Vegan Tzatziki

A vegan version of the popular sauce!
Ingredients
- 1 cup PRANA organic non-roasted cashews
- 4 tsp lemon juice
- ½ tsp sea salt
- ¼ cup water
- ½ bunch fresh mint
- ½ tsp agave or maple syrup
- 1 clove garlic
Preparation
- Soak cashews in water for up to 30 minutes. Drain (discarding the soaking water) and rinse.
- Mix all the ingredients in a blender until smooth.
- Use as a dip, a dressing, a sauce for grilled vegetables or as a spread in your sandwich.
