Chocolate and Cranberry Scones

Impress your friends and family with these easy to make scones. Prepare them the night before and serve them for breakfast or brunch!
Ingredients
- 1 1/2 cup spelt flour or all-purpose gluten-free flour
- 1/4 cup PRANA organic fair trade cane sugar
- 1 pinch sea salt
- 1 tbsp baking powder
- 1/2 cup PRANA organic cranberries, sweetened with apple juice
- 1/3 cup PRANA organic chocolate chunks, 70% cacao
- 1/2 cup PRANA organic coconut oil
- 1/3 cup almond milk
- 1 tbsp maple syrup
Preparation
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Make sure the coconut oil is solid and cold. Cut into small cubes, making sure it doesn't melt.
- Mix the flour, baking powder, sugar, salt and cranberries together in a bowl.
- Add the coconut oil cubes and mix together using your hands. Add the chocolate.
- Cover a flat surface with flour and quickly knead together with your hands until the dough's consistency is uniform.
- Flatten into a circle about 1" thick and even it out with a rolling pin.
- Using a round pastry cutter (about 2.5" in diameter), cut out approximately 8 scones.
- Gather the remaining bits of dough, and shape, roll and cut as many times as needed to use up all of the dough.
- Delicately place the scones on the prepared baking sheet.
- Brush with a bit of almond milk.
- Place in preheated oven and bake for 15 minutes.
- Remove from oven and let cool on a rack.
