We can never get enough chia pudding! Whether it's a healthy version or a more decadent one, chia pudding makes a great breakfast, dessert or afternoon snack. Kids love it in their lunch boxes, so simply prepare it in a small Mason jar! This rich and creamy version, with coconut milk and cacao powder, is made for the chocolate lover in your life. It's got a summery twist from orange zest (chocolate + orange = a match made in heaven), but you can also make it a little more exotic by adding spices like cinnamon or cardamom. If you're preparing this chia pudding in advance, it'll keep for 2 to 3 days in the refrigerator in a tightly sealed container. If you find the end result too thick, add a little extra coconut or almond milk to thin it out for a smooth, creamy texture.
Ingredients
- 1 cup of coconut milk or almond milk
- 2 tbsp PRANA organic raw cacao powder
- 3 tbsp agave or maple syrup
- 3 tbsp orange juice
- 2 tbsp orange zest
- 4 tbsp PRANA organic whole black Proactivchia seeds
Preparation
- Pour the almond milk into a bowl. Add the agave or maple syrup and cacao powder, and whisk to combine. Add the orange juice and zest.
- Pour the chocolate mixture into a 500 ml Mason jar and add the chia seeds. Close the jar and shake vigorously so that the chia seeds don't stick together.
- Let the mixture sit for about 30 minutes until it's reached the consistency of tapioca pudding. Shake occasionally as needed.
