Cream of Carob and Hazelnut Butter Mousse

Did you know that carob powder is rich in fibre and calcium and doesn't contain any caffeine, unlike cocoa? It makes a great substitute as it is similar in taste. Try this recipe that adults & kids alike will enjoy.
Ingredients
- 4 cups almond milk
- 1/4 cup maple syrup
- 1/4 cup carob powder
- 1/4 cup PRANA organic hazelnut butter
- 1 tsp agar-agar
- 1 tbsp vanilla essence
- A pinch of sea salt
- 1/4 cup PRANA organic raw hazelnuts
- Maple syrup, to drizzle on nuts
Preparation
- Pour the almond milk in a saucepan. Using a whisk add in the agar agar, vanilla extract, maple syrup and carob powder.
- Bring to a boil while constantly whisking so the mixture thickens.
- Remove from heat, add the hazelnut butter and salt. Mix and pour immediately in small ramekins.
- Refrigerate for at least 2 hours.
- Place the hazelnuts on a parchment paper covered baking sheet and drizzle with maple syrup. Toss well so they are evenly coated. Caramelize in the oven at 300°F for 15 minutes. Let cool, then chop them in large pieces.
- Top the mousse off with the caramelized hazelnuts.
