Dried Fig Gingerbread

Enjoy this new take on a classic gingerbread that incorporates dried figs and maple syrup!
Ingredients
- 2 cups rye flour or all-purpose gluten-free flour
- 1/4 cup maple syrup
- 1 tbsp gingerbread spice blend
- 1/2 cup almond milk
- 1/4 cup water
- 1/2 tsp baking soda
- 8 PRANA organic figs
- 1 tsp baking powder
Preparation
- Preheat the oven to 350°F (180°C).
- Cut 6 dried figs into thin slices, then mix all the dry ingredients together (figs, flour, spices, baking soda, and yeast)
- In a pan, heat the almond milk, water and maple syrup, making sure not to boil.
- In a food processor or using a hand mixer, mix the dry ingredients while slowly adding the liquids until it becomes consistent and smooth.
- Pour the batter into a greased pan and place the remaining 2 figs, thinly sliced, on top.
- Reduce the oven to 300°F (150°C) and bake for 40 minutes or until a knife tip inserted into the centre comes out clean.
- The gingerbread will keep for several weeks when kept well wrapped!
