Fig, Date and Walnut Cookie

These gluten-free cookies are absolutely decadent.
Ingredients
- 1/3 cup almond milk
- 6 PRANA organic Medjool dates, pitted
- 3 PRANA organic figs
- 1 tbsp PRANA raw lucuma powder
- 2 cups PRANA organic raw European almonds, ground to a flour
- 1 tsp organic fair trade ground Ceylon true cinnamon
- 1 pinch sea salt
- 2 tbsp maple syrup
- 1/4 cup PRANA organic raw walnuts
- 1 tbsp PRANA organic whole sesame seeds
Preparation
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Chop the dates and figs into small pieces.
- In a blender, combine the almond milk, almond flour, lucuma, cinnamon, salt and maple syrup. Blend until smooth.
- Add the dried fruits and walnuts. Mix well.
- Spoon ping-pong size balls of dough on the prepared baking sheet, about 1" apart. Lightly flatten the balls and sprinkle with sesame seeds.
- Place in preheated oven and bake for 15 minutes or until nice and golden.
- Remove from oven and let cool.
