Mango-strawberry popsicles with coconut chips

Our Classic coconut chips in a fruit popsicle? You better believe it! Homemade popsicles can be made 1001 different ways but this layered version with crunchy coconut chips will be a hit with everyone from age 1 to 101! For more fun and refreshing ideas, check out our other popsicle recipes!

Ingredients

  • 2 1/2 cups mango chunks (about 3 large mangos)
  • 1 cup coconut milk
  • 2 tbsp maple syrup
  • 1 cup strawberries
  • 3/4 cup PRANA organic coconut strips

Preparation

  1. Put the mango chunks in the bowl of your food processor and mix until smooth and creamy. Add a little water if it's too thick. Put a few coconut chips in the bottom of your popsicle molds and pour the puréed mango over it.
  2. Rinse the bowl of your food processor and mix the coconut milk, maple syrup and strawberries together.
  3. Pour the second mixture on top of the mango layer and freeze for 5 hours.
