A decadent, delicious, raw and rich gourmet dessert! Using coconut milk as the base for a "whipped cream" makes all the difference in flavour. Parfait is the french word for "prefect", which aptly describes this desert. Can you tell we love this one?


Raw brownie

  • 1 cup of PRANA organic Medjool dates
  • 1 cup of PRANA organic raw pecans
  • 1/2 cup of PRANA organic Brazil nuts
  • 1/3 cup of PRANA organic raw cacao powder
  • 1/4 cup of PRANA organic finely grated coconut
  • A pinch of sea salt
  • 1 1/2 teaspoons of vanilla essence

Coconut Milk Mousse

  • 1 can of coconut milk
  • 2 tablespoons of PRANA organic raw cacao powder
  • 2 tablespoons of maple syrup


Nuts & Dates

  1. Soak the nuts for several hours in water, and then rinse well.
  2. Remove the pits from the dates and then chop into small pieces. In a food processor, mix all the ingredients together to make a paste.

Coconut Milk Mousse

  1. Refrigerate your can of coconut milk overnight.
  2. Remove the coconut milk can from the fridge and carefully extract the creamy part of the coconut milk with a spoon and place in a bowl. Set aside the liquid.
  3. Vigorously whisk together the the coconut cream, cacao powder and maple syrup until the mixture doubles itself and becomes light and airy. You can use an electric hand mixer for this as well.

How To Put It Together

  1. In a ramekin, glass, or mason jar, add about 1/4 cup of the brownie paste (or more) to form the base.
  2. Using an icing bag, add the whipped coconut cream, then sprinkle the parfait with nuts and shredded coconut.
