Raw Berry Tarts with Coconut Cream

With their delicate coconut cream flavour and fresh berries, this raw tart recipe is the perfect addition to any summer menu.
Ingredients
Crust
- 1 cup PRANA organic raw walnuts
- 1 cup PRANA organic raw European almonds
- 1/4 cup PRANA organic finely grated coconut
- 8 PRANA organic Medjool dates, pitted
- 1/8 cup water
- A pinch of sea salt
Filling
- 1 cup coconut cream
- 2 tbsp maple syrup
- 2 cups mixed berries (raspberries, blueberries, blackberries, strawberries...)
- Mint leaves for decoration
Preparation
Crust
- Remove the pits from the Medjool dates and chop finely.
- In a food processor, pulse the walnuts and almonds into small pieces. Add the dates, shredded coconut, water and salt and mix until uniform.
- Line each small tart mold with plastic wrap and evenly distribute the crust dough. Make sure to press the dough firmly into each mold. Refrigerate 30 minutes.
Filling
- Using a whisk or electric mixer, whip the coconut cream and maple syrup until light and smooth.
- Divide the coconut cream evenly among the tart molds.
- Garnish with fresh berries refrigerate for 30 minutes before eating. The tarts taste best when chilled.
- Gently lift the plastic wrap to remove the tarts from the molds. Enjoy!
