Soft Oatmeal, Raisin and Almond Cookies

There is no such thing as too many cookie recipes. Lucky for you this one is pretty healthy, as it is loaded with almonds and raisins!
Ingredients
- 1/2 cup PRANA organic raw European almonds
- 2 cups oatmeal
- 1 cup spelt flour
- 1 cup PRANA organic raw European almonds, ground down to a powder
- 1/2 tsp baking powder
- 1 tsp ground cardamom
- 1/2 cup PRANA organic coconut oil
- 1 tbsp PRANA organic fair trade cane sugar
- 1/3 cup maple syrup
- 1 tbsp vanilla extract
- 1/2 tsp sea salt
- 1/2 cup PRANA organic Thompson raisins
Preparation
- Melt the coconut oil in a double-boiler.
- In a large bowl, mix together the oatmeal, flour, almond powder, baking powder, cardamom, sugar and salt.
- In a smaller bowl, mix together the coconut oil, maple syrup and vanilla.
- Combine the contents of the two bowls and mix well. Set aside for 10 minutes.
- Place the raisins in a small bowl of boiling water to rehydrate them. Remove squeeze excess liquid out.
- In a small pan, lightly toast the almonds, stirring constantly to prevent burning. Set aside to cool.
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Mix in the raisins and almonds in the cookie dough.
- Shape balls of about 1/4 cup of dough and place on the prepared baking sheet, spaced evenly.
- Place in preheated oven and bake for 15 minutes (max).
- Remove from oven and let cool on a cooling rack. Cookies will harden as they cool.
