Sweet Potato Latkes with Cashew Lime Sauce

Easy and savoury, these sweet potato latkes are the perfect accompaniment to a salad, or alone as a snack. With the complimentary cashew-lime sauce, you get a real explosion of complimentary flavours. This recipe was inspired by Yotham Ottolenghi's Plenty cookbook.
Ingredients
Latkes
- 4 sweet potatoes
- 2 tsp soy sauce
- 3/4 cup spelt flour
- 1 tsp salt
- 3 green onions, chopped
- 1 tsp PRANA organic ground chia
- 1/2 tsp chili powder
- Vegetable oil for cooking
Creamy Cashew-Lime Sauce
- 1 cup PRANA organic non-roasted cashews, soaked (preferably)
- 1/2 cup water
- 2 tbs lime juice
- 1 tsp sea salt
- Pepper to taste
Preparation
Latkes- Preheat the oven to 400°F (205°C). Place the potatoes on a baking sheet and bake for 35 minutes. In the meantime, prepare the cashew-lime sauce.
- Once cooked, scoop out the flesh and mix together in a large bowl with the remaining ingredients.
- Form small patties and refrigerate for 15 minutes
- In a non-stick pan, heat a large splash of vegetable oil and cook the latkes for 3-4 minutes on each side, until nice and golden. Then, place the latkes in the oven for 15 minutes at 350°F (180°C).
Creamy Cashew-Lime Sauce
Blend all ingredients together until smooth and creamy. Adjust seasoning to taste.
