Sweet Potato Latkes with Cashew Lime Sauce

Easy and savoury, these sweet potato latkes are the perfect accompaniment to a salad, or alone as a snack. With the complimentary cashew-lime sauce, you get a real explosion of complimentary flavours. This recipe was inspired by Yotham Ottolenghi's Plenty cookbook.

Ingredients

Latkes

  • 4 sweet potatoes
  • 2 tsp soy sauce
  • 3/4 cup spelt flour
  • 1 tsp salt
  • 3 green onions, chopped
  • 1 tsp PRANA organic ground chia
  • 1/2 tsp chili powder
  • Vegetable oil for cooking

Creamy Cashew-Lime Sauce

  • 1 cup PRANA organic non-roasted cashews, soaked (preferably)
  • 1/2 cup water
  • 2 tbs lime juice
  • 1 tsp sea salt
  • Pepper to taste

Preparation

Latkes

  1.     Preheat the oven to 400°F (205°C). Place the potatoes on a baking sheet and bake for 35 minutes. In the meantime, prepare the cashew-lime sauce.
  2.     Once cooked, scoop out the flesh and mix together in a large bowl with the remaining ingredients.
  3.     Form small patties and refrigerate for 15 minutes
  4.     In a non-stick pan, heat a large splash of vegetable oil and cook the latkes for 3-4 minutes on each side, until nice and golden. Then, place the latkes in the oven for 15 minutes at 350°F (180°C).

Creamy Cashew-Lime Sauce

    Blend all ingredients together until smooth and creamy. Adjust seasoning to taste.
