Tofu Banh Mi with JIVE Spicy Coconut Chips

This sandwich will take you away! In Vietnam, banh mi is a common dish you can find on almost every street corner. The recipe traditionally uses meat, but this vegan version offers a new twist for your taste buds. You'll get a crusty baguette spread with a spiced vegannaise, crunchy vegetables pickled in rice vinegar, fresh cucumber, marinated and grilled tofu, and the PRANA touch: Jive spicy coconut chips! Delicious!
Ingredients
Crunchy Pickled Veggies
- 2 tbsp water
- 1/2 cup rice vinegar
- 1 tbsp PRANA organic fair trade cane sugar
- 1/2 tsp sea salt
- 2 cups vegetables, julienned or sliced (carrot, daikon, radish, cucumber)
Marinated Tofu
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 1 lime, juice and zest of
- 1 clove garlic, grated
- 1/2 tsp ginger, grated
- 1 block firm tofu
- pepper, freshly ground
Banh Mi Sandwich
- 1 crispy baguette
- 1/2 cup vegannaise
- 1 tbsp sriracha sauce
- 1 cup cilantro, chopped
- 1 cup PRANA Jive spicy chili coconut chip
Preparation
Crunchy Pickled Veggies
- In a bowl, combine the water, vinegar, sugar and salt. Mix until the sugar is dissolved. Put the vegetables and the liquid in a Mason jar and refrigerate.
- While the vegetables are pickling, prepare the tofu marinade.
Marinated Tofu
- In a shallow bowl, mix together the oil, soy sauce, lime juice and zest, garlic and ginger.
- Slice the tofu and squeeze the excess water out of them using a clean dish towel.
- Place the tofu slices in the marinade for at least 15 minutes, until a good portion of the liquid is absorbed.
- In a non-stick frying pan, heat a bit of coconut oil and brown the tofu slices for 3 to 4 minutes on each side. Season with pepper.
Banh Mi Sandwich
- Cut the baguette into 4 pieces and slice each one open.
- In a small bowl mix together the vegannaise and sriracha. Spread generously inside each section of baguette.
- Dress the sandwich with 2 or 3 tofu slices, some pickled veggies, fresh cilantro and a healthy handful of JIVE coconut chips.
