A great recipe for vegan chocolate mini cakes? No problem! Don't forget the applesauce - it makes them extra soft. Make your own homemade applesauce for an extra lovely touch - I made mine by mixing an apple with a bit of water in the food processor. This recipe also works to make ultra yummy chocolate muffins!

Ingredients

mini cakes

  • 1 cup flour
  • 1/3 cup PRANA organic fair trade cane sugar
  • 1/4 cup PRANA organic raw cacao powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup applesauce
  • 1/4 cup + 2 tbsp nut milk
  • 2 tbsp PRANA organic coconut oil, melted
  • 1/2 tsp vanilla extract

chocolate ganache

  • 1/4 cup nut milk
  • 1 cup PRANA organic chocolate chunks, 70% cacao
  • chopped nuts, for garnish (optional)

Preparation

  1. Preheat the oven to 350°F (180°C) and grease a muffin tin.
  2. In a medium bowl, mix the flour, sugar, cacao powder, baking powder, baking soda and salt.
  3. In a separate bowl, mix the applesauce, nut milk, oil and vanilla extract. 
  4. Add the wet ingredients to the dry ingredients and mix well.
  5. Pour the batter into the cake pan and place in preheated oven to bake for 12 to 15 minutes. To check doneness, insert a knife into the centre of one of the mini cakes - if it comes out clean, they're ready.
  6. Remove from oven and let cool completely on a rack. 
  7. While the mini cakes are cooling, prepare the ganache.

chocolate ganache

  1. Put the chocolate in a bowl. 
  2. Heat the nut milk in a small saucepan until just boiling, then pour it onto the chocolate and mix with a spatula. 
  3. Dip each mini cake in the ganache.
  4. If desired, sprinkle with chopped nuts and let set for 5 minutes.
