Vegan Pumpkin Spiced Latte

Sip your way to heavenly bliss with this warm, comforting and totally vegan pumpkin spiced latte! Enjoy it on a brisk fall day cozily wrapped up in your favourite sweater.

Ingredients

Pumpkin Spice Syrup
  • ½ cup PRANA organic fair trade cane sugar
  • 1 cup filtered water
  • 1 tsp PRANA organic fair trade ground Ceylon true cinnamon
  • ¼ tsp nutmeg
  • ½ tsp cardamom
  • 3 tbsp pumpkin puree

Pumpkin Spiced Latte

  • 1 or 2 shots espresso (depending on how strong you want it)
  • 2 tbsp pumpkin spice syrup
  • ½ cup hot almond milk
  • Dollop vegan whipped cream (optional)

Preparation

  1. In a small pot, mix all ingredients together except the pumpkin puree. Bring to a slight boil and stir to help dissolve the sugar. 
  2. Mix in the pumpkin puree using a whisk. 
  3. Let cool for about 10 minutes before transferring to an airtight container. 
  4. Store for up to 3 weeks.

Pumpkin Spiced Latte

  1. Put the espresso and the Pumpkin Spice Syrup together in a mug and stir. 
  2. Add the almond milk and whipped cream.

I am enjoying this recipe as I write this review. I prefer it over the seasonal offerings at my local coffee shop. My own little modification was to add a pinch of ground clove and a pinch of ground ginger to spice it up a bit.
