Vegan Sloppy Joes
Lentils are considered a staple food for a reason - they're ultra nutritious, cheap, and can be prepared in just about a million ways from salads to soups, stews and dhal. While most dried legumes require hours of soaking prior to cooking, lentils are the exception to that rule. All they need is a good rinse under cold water and about 20 minutes of cooking (just make sure they don't turn into purée). Making this Sloppy Joe recipe is also super easy. Alll you need is some garlic, onion, and spices simmered in tomato sauce. Within a few minutes, the spices warm up and the flavours come out. While this delicious Sloppy Joe filling goes great with any type of burger bun, it's extra delicious in our sweet potato and turmeric buns.
- ½ cup brown lentils
- 1 cup water or vegetable broth
- 1 tbsp olive oil
- 1 onion
- 1 stalk celery
- 1 cup tomato sauce
- 2 cloves garlic
- 1 tbsp PRANA organic fair trade cane sugar
- 1 tsp apple cider vinegar
- 1 tsp soy sauce
- ½ tsp chili powder
- ¼ tsp smoked paprika
- ¼ tsp ground cumin
- Sea salt and fresh ground pepper
- ⅓ cup PRANA organic non-roasted cashews, chopped
- Burger buns
- Sliced avocado
- Coleslaw (optional)
- Put the lentils in a medium saucepan and cover with water or vegetable broth. Bring to a boil. Reduce heat, cover and simmer 20 minutes or until lentils are tender.
- While lentils are cooking, finely chop onion, garlic and celery. In a large frying pan, heat oil over medium heat, add onion and celery, then cook 3 minutes. Add garlic and cook 1 more minute until golden.
- Pour in tomato sauce, mix well, and add in maple syrup, vinegar, soy sauce, spices and cashews. Lower heat and let simmer 8 to 10 minutes, stirring regularly. Season to taste. Add cooked lentils and let simmer at least 10 minutes more.
- Heat some buns and spoon lentil stew onto them. Garnish with avocado slices and coleslaw if using. Enjoy!
