Avocado, Chocolate and Goji Berry Truffles

Slightly sweet and totally irresistible healthy truffles!
Ingredients
- 2 cups darkchocolate chunks, divided
- 1/2 cup avocado
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1 pinch sea salt
- 1 tbsp rolled oats (not instant)
- 1/3 cup goji berries
- 1 tbsp coconut palm sugar
Preparation
- Line a baking sheet with parchment paper.
- Melt 1 1/2 cup of chocolate over medium heat in a double boiler.
- Using a food processor, purée the avocado and add the maple syrup and vanilla.
- Add the purée to the chocolate and mix using a spatula. Add the sea salt. Let cool then place in the freezer for 20 minutes.
- In a food processor mix the goji berries, sugar, and rolled oats for a few seconds to obtain a grainy texture. Make sure not to over mix in order to keep some goji berry chunks. Set aside.
- Melt the remaining 1/2 cup of chocolate in a double boiler. Set aside.
- Using a teaspoon, form 1" balls of the chocolate mixture.
- Insert a fork to dip the balls in the melted chocolate.
- Sprinkle with the goji berry mixture.
- Place on the prepared baking sheet and let them set in the fridge for about 1 hour.
These truffles make a great gift or party favor. Store in the fridge.
