Ingredients
- ¾ cup raw almonds
- 2 cups water
- 1 tsp vanilla extract
- 6 Medjool dates, pitted
- 6 tbsp raw cacao powder
Preparation
- Soak almonds for 4 hours or all night. Discard water and rinse well.
- Soak dates in 1 cup of water for 30 minutes.
- Put the almonds and 2 cups water in a high-speed blender and mix for approximately 1 minute.
- Strain, pressing gently on the mixture to extract as much milk as possible.
- Rinse the blender and pour the milk back in.
- Add the vanilla, cacao powder and dates with their soaking water. Mix well.
- Milk will keep for a couple of days in the fridge.
TIP: Add 3 tbsp of chia seeds to 1 cup of almond milk. Mix well and let sit so that the seeds soak up the milk; about 45 minutes. The texture will be that of a pudding.
