Chocolate Chip Energy Bars

These easy to make bars are vegan, gluten-free and paleo friendly! Make them for your lunches instead of packing store-bought brands.


  • 1 cup Medjool dates, pitted
  • 1 ½ cup cashews
  • ½ tsp sea salt
  • 3 tbsp dark chocolate chunks
  • 1 tsp vanilla extract

SUBSTITUTE Substitute half the dates for our dried figs and indulge in new tastes.

PRESERVATION Store in the refrigerator in an airtight container.


  1. Line an 8" square baking pan with parchment paper.
  2. Place the cashews in a food processor and pulse until broken down to pieces smaller than the size of peas.
  3. Add the dates. Pulse until combined and the mixture easily sticks together when squeezed between your fingers. 
  4. Add the salt and vanilla and pulse until just combined.
  5. Add the chocolate and pulse until just mixed
  6. Remove the mixture from the food processor and place it in the prepared pan, smoothing it out by hand until it is even. The more you pack it down, the better they'll hold together!
  7. Place the pan in the freezer for at least 15 minutes. 
  8. Remove from freezer and cut into bars.
