These bars are a dream come true for the coconut lover in your life. Completely vegan and totally easy, they're a mix of dark chocolate chunks and creamy coconut filling. With only six ingredients, they're much less sugary-sweet than commercial varieties. Ingredients

  • 1/4 cup maple syrup
  • 1 cup coconut milk
  • 2 1/4 cups shredded coconut
  • 1 pinch sea salt
  • 1/2 tsp vanilla extract
  • 2 cups dark chocolate chunks

Preparation

  1. Line a baking sheet with parchment paper.
  2. In a saucepan, heat the maple syrup for a few minutes until it's thickened and lightly caramelized.
  3. Add the coconut milk, shredded coconut, salt and vanilla extract. Cook for 2 minutes, stirring constantly, then remove from heat. The mix should have reduced to a creamy consistency.
  4. Pour the mix into a bowl and place in the refrigerator for 20 minutes to cool.
  5. Remove from fridge and shape mixture into small bars of about 2", pressing each one in your palms. Place on the prepared baking sheet and return to refrigerator to chill for 1 hour.
  6. Melt the chocolate chunks in a bain marie or double boiler. 
  7. Remove bars from the refrigerator and, using a fork, prick each one to dip into the dark chocolate to coat completely. Lay on the prepared baking sheet. Let the chocolate harden for several minutes.
  8. Store in a sealed container in the refrigerator for several days.
