We can never get enough chia pudding! Whether it's a healthy version or a more decadent one, chia pudding makes a great breakfast, dessert or afternoon snack. Kids love it in their lunch boxes, so simply prepare it in a small Mason jar! This rich and creamy version, with coconut milk and cacao powder, is made for the chocolate lover in your life. It's got a summery twist from orange zest (chocolate + orange = a match made in heaven), but you can also make it a little more exotic by adding spices like cinnamon or cardamom. If you're preparing this chia pudding in advance, it'll keep for 2 to 3 days in the refrigerator in a tightly sealed container. If you find the end result too thick, add a little extra coconut or almond milk to thin it out for a smooth, creamy texture.

Ingredients

  • 1 cup of coconut milk or almond milk
  • 2 tbsp raw cacao powder
  • 3 tbsp agave or maple syrup
  • 3 tbsp orange juice
  • 2 tbsp orange zest
  • 4 tbsp PRANA organic whole black Proactivchia seeds

Preparation

  1. Pour the almond milk into a bowl. Add the agave or maple syrup and cacao powder, and whisk to combine. Add the orange juice and zest.
  2. Pour the chocolate mixture into a 500 ml Mason jar and add the chia seeds. Close the jar and shake vigorously so that the chia seeds don't stick together.
  3. Let the mixture sit for about 30 minutes until it's reached the consistency of tapioca pudding. Shake occasionally as needed.
