Coconut, Maca and Cacao Fudge

A melt-in-your-mouth vegan fudge that is as healthy as it is delicious.

Ingredients

  • 12 Medjool dates, pitted
  • 1/2 cup coconut oil
  • 6 tbsp cacao powder
  • 4 tbsp maca powder
  • 1/2 cup shredded coconut
  • 2 generous pinches sea salt
  • 1 tbsp vanilla extract

Preparation

  1. Melt the coconut oil in a bain marie.
  2. In a food processor, mix the melted coconut oil with the cacao powder, dates (if your dates are tough we recommend you soften them by soaking them in warm water for 10 minutes), maca powder, vanilla extract, shredded coconut and salt.
  3. Line a 6" square pan (or any similar size at your disposal) with plastic wrap. Transfer the mixture to the pan and press down to get a smooth and even surface.
  4. Place in refrigerator to chill until it becomes solid, about 1 hour.
  5. Remove from refrigerator and cut into small cubes.
  6. Store in an airtight container.
