Dried Fig Gingerbread

Enjoy this new take on a classic gingerbread that incorporates dried figs and maple syrup!

Ingredients

  • 2 cups rye flour or all-purpose gluten-free flour
  • 1/4 cup maple syrup
  • 1 tbsp gingerbread spice blend
  • 1/2 cup almond milk
  • 1/4 cup water
  • 1/2 tsp baking soda
  • 8 PRANA organic figs
  • 1 tsp baking powder

Preparation

  1. Preheat the oven to 350°F.
  2. Cut 6 dried figs into thin slices, then mix all the dry ingredients together (figs, flour, spices, baking soda, and yeast)
  3. In a pan, heat the almond milk, water and maple syrup, making sure not to boil.
  4. In a food processor or using a hand mixer, mix the dry ingredients while slowly adding the liquids until it becomes consistent and smooth.
  5. Pour the batter into a greased pan and place the remaining 2 figs, thinly sliced, on top.
  6. Reduce the oven to 300°F and bake for 40 minutes or until a knife tip inserted into the centre comes out clean.
  7. The gingerbread will keep for several weeks when kept well wrapped!
