Festive Chocolate Mulberry Pecan Granola

Quick and easy deluxe granola that will make your taste buds tingle! Place it in a pretty jar and tie on some raffia to offer it as a hostess gift. Make this a fun family activity at home!
Ingredients
- 5 cups rolled oats (not instant)
- 1/2 cup almonds
- 1/2 cup pecans
- 1/4 cup walnuts
- 2 tbsp ground cinnamon
- 1 tbsp ground ginger
- 1 tbsp vanilla extract
- 1/2 tsp sea salt
- 1/2 cup coconut oil
- 3/4 cup maple syrup
- 1/4 cup dried mulberries
- 1/4 cup pumpkin seeds
- 1/2 cup dark chocolate chunks
- 3 tbsp PRANA organic whole chia seeds
Preparation
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- Coarsely chop up the nuts.
- In a large bowl combine the oats, nuts, spices, vanilla and sea salt. Set aside.
- In a small saucepan, melt the coconut oil. Add maple syrup and remove from heat.
- Pour the warm coconut oil mixture over the dry ingredients and stir until the oats are well coated.
- Spread the mixture on the prepared baking sheet (will be approximately 1" thick), without compacting it.
- Place in the middle of the preheated oven and bake for 10 minutes.
- Remove from oven and stir mixture. Return to the oven for another 5 minutes.
- In a bowl, mix together the dried fruits, and the chia and pumpkin seeds.
- Remove baking sheet from the oven, add the fruit mixture and mix until combined. Return to the oven for another 5 minutes.
- Remove from oven, add the chocolate chips and let cool.
