Fig, Date and Walnut Cookie

These gluten-free cookies are absolutely decadent.


  • 1/3 cup almond milk
  • 6 Medjool dates, pitted
  • 3 PRANA organic figs
  • 1 tbsp lucuma powder
  • 2 cups almonds, ground to a flour
  • 1 tsp ground cinnamon
  • 1 pinch sea salt
  • 2 tbsp maple syrup
  • 1/4 cup walnuts
  • 1 tbsp sesame seeds


  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Chop the dates and figs into small pieces.
  3. In a blender, combine the almond milk, almond flour, lucuma, cinnamon, salt and maple syrup. Blend until smooth.
  4. Add the dried fruits and walnuts. Mix well.
  5. Spoon ping-pong size balls of dough on the prepared baking sheet, about 1" apart. Lightly flatten the balls and sprinkle with sesame seeds.
  6. Place in preheated oven and bake for 15 minutes or until nice and golden. 
  7. Remove from oven and let cool.
