Gluten-free hazelnut-cacao cookies

Here's a recipe for gluten-free cookies with the delicious flavour of hazelnut. They're satisfying, healthy(ish) and just sweet enough to satisfy that mid-afternoon chocolate craving. They also make a great accompaniment to a mug of piping hot cocoa!
Ingredients
- 1 cup raw European almonds
- 1 cup raw hazelnuts
- 5 Medjool dates, pitted
- 1 2/3 cup buckwheat flour
- 3 tbsp raw cacao powder
- 5 tbsp maple syrup
- 2/3 cup homemade almond milk
- 3 tbsp PRANA organic whole black chia seeds
- 3 tbsp coconut oil, melted
- 1/4 cup dark chocolate chunks
Preparation
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In the bowl of a food processor, mix the almonds and hazelnuts until they're ground to a fine powder. Add the dates and mix for a few extra seconds.
- In a large bowl, mix together the rest of the ingredients. Add the nut and date mixture.
- Mix well to form a ball of cookie dough. Make individual cookies dough balls with your hands, place on prepared baking sheet and flatten slightly.
- Press several chocolate chunks into each cookie and bake in preheated oven for 20 minutes.
- Remove to a cooling rack and let cool for several minutes.
