Grilled Veggie Naan

A super simple pizza recipe that's perfect for a light lunch or quick dinner.

Ingredients

  • 1 clove garlic
  • ½ cup tomato sauce
  • 1 tsp maple syrup
  • 1 tomato
  • 1 zucchini
  • 4 artichoke hearts
  • ¼ cup PRANA organic raw walnuts
  • 1 tbsp olive oil
  • ½ tsp ground cumin
  • 1 pinch of sea salt and fresh ground pepper
  • 1 tbsp nutritional yeast
  • 4 naan breads
  • ½ cup Kalamata olives
  • A few leaves of fresh basil
  • 2 tbsp pesto (optional)

Preparation

  1. Preheat oven to 350°F.
  2. Grate garlic clove and mix with tomato sauce and maple syrup.
  3. Thinly slice tomato and zucchini. Quarter artichoke hearts and chop walnuts.
  4. In a salad bowl, gently toss vegetables and nuts with olive oil, cumin, salt and pepper. Add nutritional yeast and mix.
  5. Spread tomato sauce evenly over naan breads, then top with vegetable-nut mixture. Sprinkle with olives.
  6. Bake 15 minutes, then broil 3 minutes more. Let cool a few minutes and decorate with basil. Drizzle with pesto, if using.
