Layered Chia Pudding with Pitaya Smoothie

This chia pudding recipe is perfect for breakfast/brunch, as a snack or to impress your guests! It’s healthy, low in fat and almost too pretty to eat!

Ingredients
Chia Puddings
White layer:
- 4 tbsp PRANA organic whole chia seeds
- 1 cup plant-based milk
- 1 tbsp maple syrup
- 1/4 tsp vanilla extract
Pink layer:
- 4 tbsp PRANA organic whole chia seeds
- 1 cup plant-based milk
- 1 tbsp maple syrup
- 1/4 tsp vanilla extract
- 1 tsp pitaya powder (or other natural pink dye such as beet powder)
Smoothie
- 1 1/2 cup frozen bananas
- 1/2 cup frozen strawberries
- 2 tbsp plant-based milk
- 2 tsp pitaya powder
Preparation
Chia Puddings
- Place all white layer ingredients together in one bowl and all pink layer ingredients together in a separate bowl.
- Mix well, cover and refrigerate one hour (or overnight).
Smoothie Layer
- Put all smoothie ingredients in a blender and blend until smooth.
- To assemble, first pour a layer of white chia pudding, then pour a layer of pink pudding and top with a layer of smoothie. Garnish with fresh fruit of your choice.
