Pecan Hazelnut Cookies

There is no better way to embrace the arrival of winter than by settling in with a warm beverage and a batch of these delicious cookies. Treat yourself!
Ingredients
- 1 cup cane sugar
- 2 tbsp baking powder
- 1/2 tsp vanilla extract
- 2 cups pecans, chopped and divided
- 1/2 cup coconut oil
- 3 tbsp water
- 1/2 cup hazelnuts, chopped
- 1/2 cup dark chocolate chunks
- 1 banana, mashed
- 2 cups organic spelt flour or all-purpose gluten-free flour
- 1 tbsp PRANA organic whole chia seeds
Preparation
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- Combine flour, sugar and baking powder in a bowl and mix.
- In a separate bowl, mix together 1 cup of pecans with the coconut oil, chia seeds, water and vanilla until well combined.
- Combine dry and wet ingredients.
- Add the remaining cup of pecans, the hazelnuts, the chocolate chips and the banana, and mix until well combined.
- Spoon batter, approximately 1 tbsp at a time, on the prepared baking pan. Allow space in between each, as they will expand.
- Place in the middle of the preheated oven and bake for 15 to 20 minutes.
- Remove from oven and let cool for at least 30 min before transferring them to a cooling rack to cool completely.
