Pecan Hazelnut Cookies

Pecan Hazelnut Cookies

There is no better way to embrace the arrival of winter than by settling in with a warm beverage and a batch of these delicious cookies. Treat yourself!

Ingredients

  • 1 cup cane sugar
  • 2 tbsp baking powder
  • 1/2 tsp vanilla extract
  • 2 cups pecans, chopped and divided
  • 1/2 cup coconut oil
  • 3 tbsp water
  • 1/2 cup hazelnuts, chopped
  • 1/2 cup dark chocolate chunks
  • 1 banana, mashed
  • 2 cups organic spelt flour or all-purpose gluten-free flour
  • 1 tbsp PRANA organic whole chia seeds

Preparation

  1. Preheat oven to 325°F and line a baking sheet with parchment paper.
  2. Combine flour, sugar and baking powder in a bowl and mix.
  3. In a separate bowl, mix together 1 cup of pecans with the coconut oil, chia seeds, water and vanilla until well combined.
  4. Combine dry and wet ingredients. 
  5. Add the remaining cup of pecans, the hazelnuts, the chocolate chips and the banana, and mix until well combined.
  6. Spoon batter, approximately 1 tbsp at a time, on the prepared baking pan. Allow space in between each, as they will expand.
  7. Place in the middle of the preheated oven and bake for 15 to 20 minutes. 
  8. Remove from oven and let cool for at least 30 min before transferring them to a cooling rack to cool completely.
