Ingredients

Beet Salad

  • ½ cup quinoa
  • ½ cup frozen edamame
  • ⅓ cup raw pecans
  • ¼ cup raw pumpkin seeds
  • 1 large carrot
  • 2 cooked beets
  • 1 orange
  • 2 cups fresh spinach or baby kale
  • 1 tbsp olive oil
  • Sea salt and ground pepper

Maple Dijon Vinaigrette

  • ¼ cup olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • ½ tbsp maple syrup
  • 1 small clove garlic, minced
  • Sea salt and ground pepper

Preparation

Beet Salad

  1. Pour 1 cup of water over quinoa in a saucepan. Bring to a boil, then set to low, cover, and simmer 10 minutes. After 10 minutes, turn off burner and leave covered to steam quinoa 10 minutes. Fluff with a fork and set aside.
  2. Pour boiling water over edamame and let sit about five minutes. Drain and set aside.
  3. Heat a small frying pan and add pecans and pumpkin seeds. Cook about 5 minutes or until golden (careful not to let burn). Set aside.
  4. Grate carrot and cut beet into small cubes. Peel and supreme orange (i.e. remove all the peel and membrane from orange segments). In a salad bowl, combine all the ingredients except for orange and spinach.
  5. Once vinaigrette is ready, mix spinach and oranges with quinoa mixture, then add vinaigrette.

Maple Dijon Vinaigrette

  1. Prepare dressing by combining all the ingredients in a mason jar, closing tightly, then shaking vigorously. Adjust seasoning to taste.
