Scary-delicious Halloween Smoothie

Here's a healthier, but just as decadent and halloweenesque, version of the popular drink. Layers of buckwheat cream and chia pudding, generously topped with vegan whipped cream: that's the way we like to celebrate Halloween!

Ingredients
Purple buckwheat cream
- ¾ cup uncooked buckwheat
- ¾ cup plant milk
- 1 ½ frozen bananas, cut into pieces
- 1 tbsp hemp seeds (optionnal)
- 1 tbsp tahini(optionnal)
- Maple syrup, to taste
- ¼ tsp vanilla extract
- 1 tsp butterfly pea powder
- 1 to 2 tsp pitaya powder
Black chia pudding
- ¼ cup whole ProactivChia seeds
- 1 cup water
- ½ to 1 tsp activated charcoal powder
- Maple syrup, to taste
Vegan whipped cream and green sprinkles
- Store-bought or homemade vegan whipped cream
- A bit of cane sugar
- Green spirulina powder
Preparation
- Pour boiling water on buckwheat groats and let them soak for about 15 minutes.
- While the buckwheat is soaking, add all the ingredients for the chia pudding to a Mason jar. Close the jar and shake energetically for about 30 seconds. Let it rest 5-10 minutes, shaking every now and then to make sure the chia seeds don't stick together and absorb all the liquid.
- Rinse the buckwheat. Transfer to a blender with the plant milk, bananas, hemp, tahini and vanilla. Taste and add sweetener. Add the colouring powders (butterfly pea and pitaha) and blend again. Reserve.
- In a glass, alternately pour the buckwheat cream and chia pudding. Top with a generous helping of vegan whipped cream.
- In a small bowl, mix a bit of cane sugar and spirulina powder. Sprinkle on top of the whipped cream. Enjoy!
