A quick on-the-go breakfast, a more decadent brunch, a filling lunch - no matter how you serve this scrambled tofu, it'll be a success. Just a little nutritional yeast, spices, and onion elevate tofu into a multi-meal staple. At breakfast: eat it in a tortilla, on toast, or in a sandwich accompanied by lettuce, avocado and a little vegan mayo. And when it comes to lunch and dinner? Scrambled tofu makes a great addition to your favorite recipes. Try it with stir-fried vegetables, make a Bolognese sauce with it, or mix it with some beans in a spicy chili!

Ingredients

  • A drizzle of olive oil
  • 1 small yellow onion
  • 1 clove of garlic
  • 1 block tofu, crumbled
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • Sea salt and freshly ground pepper
  • 1 tbsp nutritional yeast
  • 1 tbsp soy sauce
  • 2 chopped green onions
  • Corn tortillas
  • 2 avocados
  • Lettuce leaves

Preparation

  1. Finely chop the onion and garlic
  2. In a frying pan, heat the olive oil. Brown the onion and garlic for 3 minutes. Add the spices and cook for another minute. Add the crumbled tofu, nutritional yeast and soy sauce. Continue cooking for 5 minutes
  3. Heat up the corn tortillas. On each tortilla add a piece of lettuce, 2 big spoonfuls of crumbled tofu and a few slices of avocado. Wrap up and enjoy!
