Ultimate vegan chocolate mini-cakes

A great recipe for vegan chocolate mini cakes? No problem! Don't forget the applesauce - it makes them extra soft. Make your own homemade applesauce for an extra lovely touch - I made mine by mixing an apple with a bit of water in the food processor. This recipe also works to make ultra yummy chocolate muffins!
Ingredients

- 1 cup flour
- 1/3 cup cane sugar
- 1/4 cup cacao powder
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup applesauce
- 1/4 cup + 2 tbsp nut milk
- 2 tbsp coconut oil, melted
- 1/2 tsp vanilla extract
chocolate ganache
- 1/4 cup nut milk
- 1 cup dark chocolate chunks
- chopped nuts, for garnish (optional)
Preparation

- Preheat the oven to 350°F and grease a muffin tin.
- In a medium bowl, mix the flour, sugar, cacao powder, baking powder, baking soda and salt.
- In a separate bowl, mix the applesauce, nut milk, oil and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix well.
- Pour the batter into the cake pan and place in preheated oven to bake for 12 to 15 minutes. To check doneness, insert a knife into the center of one of the mini cakes - if it comes out clean, they're ready.
- Remove from oven and let cool completely on a rack.
- While the mini cakes are cooling, prepare the ganache.
chocolate ganache
- Put the chocolate in a bowl.
- Heat the nut milk in a small saucepan until just boiling, then pour it onto the chocolate and mix with a spatula.
- Dip each mini cake in the ganache.
- If desired, sprinkle with chopped nuts and let set for 5 minutes.
