One-pot pasta: a delicious, nearly effortless dinner, and only one pot to wash afterwards. Do we have your attention yet? To make this pasta dish "one-pot", the pasta cooks in its own sauce. This recipe is made even more delicious with the addition of our PRANA vegan parmesan. Made from nuts (Brazil and/or almonds, cashews), nutritional yeast, garlic and salt and pepper, vegan parmesan will enhance any dish, be it pasta, salad, quinoa, couscous or grilled vegetables. Store it in a sealed container in the fridge for up to two weeks. Time to get your food processors out and try it!
Ingredients
One-pot pasta with veggies and Kalamata olives
- 2 tbsp olive oil
- 2 cloves garlic
- 1 small yellow onion
- 1 zucchini
- 2 cups (796 ml can) diced tomatoes
- 1/2 cup Kalamata olives, pitted
- 2 tsp herbes de Provence
- 1 tsp sea salt
- 300 g of uncooked spaghetti or linguini
- 2 1/2 cups vegetable broth or water
- 1 cup fresh spinach
- Toppings: fresh chopped basil and vegan parmesan
Vegan parmesan
- 1 cup Brazil nuts (or the nut of your choice)
- 1 clove garlic
- 1 tsp sea salt
- 3 tbsp nutritional yeast
Preparation
One-pot pasta with veggies and Kalamata olives
- Finely chop the garlic. Mince the onions. Cut the zucchini into half-circles.
- In a large pot, cook the garlic, onion and zucchini in the olive oil until the onions are translucent.
- Add the tomatoes, olives, spices, salt and pasta. Mix to coat.
- Pour in the vegetable broth. Bring to boil then reduce heat to maintain a gentle boil for 5 to 8 minutes, stirring regularly until the pasta is al dente. If there's excess broth leftover, ladle it out.
- While the pasta is cooking, prepare the vegan parmesan.
- Once the pasta is al dente, add the spinach, stir well and season to taste.
- Garnish with basil and vegan parmesan.
Vegan parmesan
- Mix all ingredients in a food processor for about 45 seconds, until the texture is fine and grainy.
